Tasty Side Salad with a Tangy Dressing
I originally found this recipe along with one of the meals we got with Hello Fresh, which went really nice along the the steak meal we made. Today I made a cottage pie, so decided to make this side salad again to go along with it 😀
People have sometimes voiced their dislike of Rocket salad, because they have found it too bitter - But the addition of some red wine vinegar, takes the bitterness away and almost makes it quite sweet.
Ingredients
- 2 Tablespoons Olive oil
- 1 Tablespoon Red Wine Vinegar
- 1 Tablespoon Wholegrain Mustard
- 50g Rocket/Spinach leaves
- 200g Cherry Tomatoes
- Salt and Pepper
Method
- Firstly chop all the cherry tomatoes into halves, and place into a bowl. Add in the rocket and spinach leaves (stems and all), then give it a good mix. It may look like a lot of leaves, but the rest of the ingredients will shrink them down.
- Now add all the olive oil, red wine vinegar and wholegrain mustard. Sprinkle in a pinch of salt and grind in some fresh black pepper. Give this all a good mix.
- If you find it too tangy, add in a little sugar and mix well.
Serving
As mentioned before, this goes great with a steak as an alternative (or along with) the usual chunky chips - Just pile it on the plate next to the rest of the meal. Today I had it with a cottage pie, which I thought was a really nice pairing 🙂 Â
