Easy Chicken and Tomato pasta

When it comes to bringing a dish to a BBQ, my go-to recipe is this quick and tasty chicken and tomato pasta. I tastes great hot or cold, so you can prepare it earlier in the day, then just pot it up for later.

I sometimes change around the herbs I put into it, and sometimes add a few chillis (if we're not expecting young children to attempt to eat it πŸ˜†)

Ingredients
  • 500g Penne pasta
  • 2 Chicken breasts
  • 1 tin of chopped tomatoes
  • 4 Tablespoons of Tomato Puree
  • 3 Cloves of garlic (Or 2 tablespoons of garlic granules)
  • 2 Tablespoons of Thyme
  • 2 Tablespoons of Coriander
  • 2 Tablespoons of Worcester sauce
  • Salt and pepper
  • Olive oil
Method
  1. Boil a kettle of water. Get a large saucepan, and add the pasta with 1/2 tablespoon of salt. Add the hot water, and boil for 10-12 minutes until the pasta is cooked through. Once the pasta is cooked, drain the water and return to the saucepan. Mix in a couple tablespoons of olive oil to prevent the pasta from sticking.
  2. Heat a drizzle of oil in a pan, on medium to high heat.Β Dice the chicken breast into 1-2cm chunks, and place into the pan. Cook the chicken until golden brown. Each side of the chicken chunks should brown within a couple of minutes - if it's not browning, turn the heat up a little πŸ‘
  3. Once the chicken has browned, add the tin of chopped tomatoes and the tomato puree. Stir through until the puree is evenly mixed in.
  4. Now add the garlic, thyme, coriander and Worcester sauce. Also add in a pinch of salt and grind in some fresh black pepper. I decided to add Worcester sauce, because it gives the sauce a nice deep flavour. Stir everything together, and reduce the heat to let the sauce thicken. After a few minutes, start breaking up the chunks of chicken into smaller pieces.
  5. When the sauce is nice and thick, mix together the sauce and the pasta in a large bowl, ensuring the sauce is evenly mixed through the pasta.
Serving

After cooking the pasta, I do like to treat myself to a small bowl of it before potting it up for later πŸ™‚

But the rest of it can either stay in the large bowl, covered with some cling film. Although I tend not to do this, because I always forget to take the bowl home at the end of the BBQ, and I end up bowl-less which isn't fun ... So I stick it into a couple of small containers to take along
