Easy Chicken and Tomato pasta
When it comes to bringing a dish to a BBQ, my go-to recipe is this quick and tasty chicken and tomato pasta. I tastes great hot or cold, so you can prepare it earlier in the day, then just pot it up for later.
I sometimes change around the herbs I put into it, and sometimes add a few chillis (if we're not expecting young children to attempt to eat it π)
Ingredients
- 500g Penne pasta
- 2 Chicken breasts
- 1 tin of chopped tomatoes
- 4 Tablespoons of Tomato Puree
- 3 Cloves of garlic (Or 2 tablespoons of garlic granules)
- 2 Tablespoons of Thyme
- 2 Tablespoons of Coriander
- 2 Tablespoons of Worcester sauce
- Salt and pepper
- Olive oil
Method
- Boil a kettle of water. Get a large saucepan, and add the pasta with 1/2 tablespoon of salt. Add the hot water, and boil for 10-12 minutes until the pasta is cooked through. Once the pasta is cooked, drain the water and return to the saucepan. Mix in a couple tablespoons of olive oil to prevent the pasta from sticking.
- Heat a drizzle of oil in a pan, on medium to high heat.Β Dice the chicken breast into 1-2cm chunks, and place into the pan. Cook the chicken until golden brown. Each side of the chicken chunks should brown within a couple of minutes - if it's not browning, turn the heat up a little π
- Once the chicken has browned, add the tin of chopped tomatoes and the tomato puree. Stir through until the puree is evenly mixed in.
- Now add the garlic, thyme, coriander and Worcester sauce. Also add in a pinch of salt and grind in some fresh black pepper. I decided to add Worcester sauce, because it gives the sauce a nice deep flavour. Stir everything together, and reduce the heat to let the sauce thicken. After a few minutes, start breaking up the chunks of chicken into smaller pieces.
- When the sauce is nice and thick, mix together the sauce and the pasta in a large bowl, ensuring the sauce is evenly mixed through the pasta.
Serving
After cooking the pasta, I do like to treat myself to a small bowl of it before potting it up for later π
But the rest of it can either stay in the large bowl, covered with some cling film. Although I tend not to do this, because I always forget to take the bowl home at the end of the BBQ, and I end up bowl-less which isn't fun ... So I stick it into a couple of small containers to take along
